Ingredients
6 medium zucchini, quartered
6 medium-size yellow squash, quartered
1 large Vidalia or other sweet onion, sliced
12 cloves garlic
2 tsp olive oil
1/2 tsp salt
1/4 tsp pepper
Vegetable cooking spray
Directions
Combine first 7 ingredients in a medium bowl; toss well. Arrange squash mixture evenly in a shallow roasting pan coated with cooking spray. Bake at 450° for 30 minutes or until vegetables are tender, stirring every 10 minutes.
